Rooster and chorizo casserole, with onion, carrots and celery … and extra!
500g/1lb 2oz rooster thighs
1 onion, sliced
1 garlic clove, sliced
2 carrots, chopped
1 celery stalk, chopped
1 purple chilli, deseeded and chopped
splash purple wine
275g/9½oz chorizo, chopped
100ml/3½fl oz dry sherry
1 x 400g/14oz can chopped tomatoes
200ml/7fl oz rooster inventory
1 x 400g/14oz can chickpeas, rinsed and drained
salt and freshly floor black pepper
handful chopped recent parsley
crusty bread, (or low carb bread various), to serve
Methodology
1. Warmth half of the vegetable oil in a big pan. Add the rooster thighs and fry, turning regularly, till evenly browned throughout. Take away from the pan and preserve heat.
2. Add a little bit extra oil to the pan, then add the onion, garlic, carrots, celery and chilli and prepare dinner for 5 minutes. Add a splash of purple wine and simmer till decreased by half.
3. In one other pan, warmth the remaining oil and fry the chorizo for 2-3 minutes. Add the sherry and prepare dinner till the chorizo is crisp. Put aside.
4. Add the can of chopped tomatoes to the pan with the greens and convey to the boil. Cook dinner for 5 minutes, then add the inventory and convey again to the boil.
5. Add the browned rooster, the chickpeas and crisp chorizo and simmer for 20-25 minutes, or till the rooster is totally cooked by means of. Season, to style, with salt and freshly floor black pepper.
6. Sprinkle with chopped parsley and serve with crusty bread.
i) This rooster and chorizo stew freezes brilliantly for as much as a month.
ii) if you do not have sherry, you should utilize white wine.
